Ingredients:
- Rice vinegar-1/4 cup
- Brown Sugar-2 tablespoons
- Curry Paste-2 tablespoons
- Lime juice-2 tablespoons
- Red pepper-1/8 teaspoon,crushed
- Chicken-1 pound,boneless cut into cubes or slices
- Vegetable oil-1 1/2 tablespoon
- Carrot-1 cup,chopped
- Onion-1 cup,chopped
- Mushrooms-1 can
- coconut milk-1/2 cup
- salt-1/2 teaspoon
- Cilantro-1/2 cup,chopped
- In a plastic bag,combine the vinegar,red pepper,lime juice,curry paste and brown sugar.
- Add the chicken into the bag.
- Let the chicken marinate for 15 minutes in the refrigerator.
- In a skillet,heat the olive oil and stir fry the chicken from the bag.
- Remove the chicken after 5 minutes of stir frying.
- Add 1 1/2 teaspoon oil in to the pan and let it heat.
- Add the onion and carrots and stir fry for 4 minutes.
- Add the mushrooms and stir fry for 3 minutes.
- Pour the marinate into the skillet and stir.
- Pour the coconut milk and bring to a boil.
- Let it simmer then add the chicken.
- Serve with boiled rice and Garnish with cilantro.
