Ingredients:
- 2 eggs
- 6 tbsp Milk
- 4 Oz- Caster sugar
- 3 Oz- Coconut
- 6 Oz-Plain flour
- 2 tsp baking powder
- 4 Oz butter
- 1 tbsp brown sugar
- 2 tbsp coconut
- Take 2 eggs and beat them lightly in a measuring jug
- Add milk and fill up 1/4 pint
- Mix in 1/2 the sugar and coconut and let it set for 20 minutes
- Sift the flour and baking powder in a bowl
- Stir in the remaining sugar
- Rub in the butter until mixture looks like breadcrumbs
- Add the coconut mixture, turn the mixture into a greased and lind 1 lb loaf tin
- Mix together the coconut and sugar for toping the cake
- Bake for 45-50 minutes in a preheated oven on 190`c
