Ingredients:
Chocolate cookies:
- Flour(all-purpose)-1 3/4 cups
- Cocoa powder-3/4 cups
- Baking Powder-1 teaspoon
- Baking Soda-1/4 teaspoon
- Sat-1/4 teaspoon
- Unsalted butter-3/4 cups
- Sugar-3/4 cups
- Egg-1
- Vanilla extract-1 teaspoon
- Buttermilk-1/4 cup
Vanilla Filling:
- Butter-1/4 cup
- Icing sugar-1/4 cup
- Vanilla extract-1 1/4 teaspoon
- Light Corn Syrup-1/2 cup
Method:
Chocolate cookies:
- Preheat the oven at 375'F.
- In a bowl,sift,flour,cocoa powder,baking powder,baking soda and salt together.
- In an electric mixer bowl,mix the butter and sugar until it is soft and fluffy.
- Add the egg to the mixture.
- Beat in the vanilla extract.
- In a small measuring cup,mix the buttermilk and coffee.
- On low speed,pouf the flour mixture in the mixer,then the coffee mixture and then again the flour mixture.Mix until well combined.
- Taking an ice cream spoon,scoop the mixture and place it on a baking dish,based with butter sheet.
Filling:
- Beat the shortening and butter,until soft and creamy.
- On low speed,add the icing sugar in the electric mixer.
- Increase the speed and mix until mixture is light and fluffy.
- On low speed,add in the vanilla extract and then the syrup.
- Continue mixing until the mixture looks soft and fluffy.
After cookies have been baked,top a cookie with the vanilla filling and top it with another cookie.Whoopie Choco Pies are prepared.
